The coffee cherries are carefully received, then cleaned and sorted to select the optimal cherries for the next step, which is the depulping process. Afterward, they are spread out on African beds for a drying period of 15 to 20 days.
Following this, they are transferred to a dark room for an additional drying period of about 5 days, depending on the weather conditions.
